Wild Blueberry Syrup

This Wild Blueberry Syrup is a naturally sweet and vibrant topping for your favorite pancakes or waffles! Made with wild blueberries, raw honey, and a splash of lemon juice, it’s simple to prepare and can be thickened with a touch of arrowroot powder if desired. Perfect for drizzling over our Vanilla Oatmeal Pancakes, this syrup adds a burst of fruity goodness to your breakfast.

Ingredients
  

  • 4 cups wild blueberries
  • 2 tbsp raw honey
  • 1 tsp lemon juice
  • 1 tsp arrowroot powder optional
  • 3 tsp water optional

Instructions
 

  • In a small pot, combine the wild blueberries, raw honey, and lemon juice. Heat on high, stirring and smashing the berries as they warm.
  • In a small cup, mix the arrowroot powder and water until smooth.
  • Once the blueberry mixture reaches a boil, stir in the arrowroot mixture (if using).
  • Turn off the heat and continue stirring until the syrup thickens slightly.
  • If you prefer a thinner syrup, skip the arrowroot powder and water and use as-is.
  • Pour the syrup over your pancakes or waffles, and enjoy!
