Vanilla Oatmeal Pancakes

These Vanilla Oatmeal Pancakes are a healthy and delicious way to start your day! Ingredients
  

  • 4 cups oats
  • 3 cups water
  • 3 tsp baking powder
  • 2 tsp vanilla
  • 1 cup applesauce
  • 2 tsp cinnamon

Instructions
 

  • Preheat a griddle or pan to medium heat.
  • Add all ingredients to a Vitamix blender. Blend until the batter is smooth.
  • Pour 1/4 cup of batter onto the heated griddle (or adjust size to your preference).
  • Cook until bubbles appear on the surface of the pancake, then flip and cook until golden brown.
  • As you cook, the oats will absorb water, thickening the batter. Add 1-2 tablespoons of water at a time and stir to maintain a pourable consistency.
  • Serve with our Blueberry Syrup or your favorite syrup. Optional: Add sliced bananas and chopped walnuts on top.
