Instructions
Preheat oven to 425°F (220°C).
Prep the potatoes: Wash and dice sweet potatoes into bite-sized cubes (keep the skin on for extra fiber or peel if preferred).
Season: In a large bowl, toss the sweet potatoes with avocado oil, Italian seasoning, garlic powder, onion powder, salt, and pepper until evenly coated.
Roast: Spread the sweet potatoes in a single layer on a parchment-lined baking sheet.
Bake: Roast for about 45 minutes, flipping halfway through, until edges are golden and crispy and centers are tender.
Serve: Enjoy hot as a side dish or toss into salads, bowls, or wraps!
