Savory Roasted Sweet Potatoes

Perfectly tender with crispy edges, these roasted sweet potatoes are seasoned simply and deliciously—making them a go-to side dish for any meal.

Ingredients
  

  • 6–8 sweet potatoes, medium sized diced (skin on or peeled)
  • 3 tbsp avocado oil
  • 1 tsp italian seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 425°F (220°C).
  • Prep the potatoes: Wash and dice sweet potatoes into bite-sized cubes (keep the skin on for extra fiber or peel if preferred).
  • Season: In a large bowl, toss the sweet potatoes with avocado oil, Italian seasoning, garlic powder, onion powder, salt, and pepper until evenly coated.
  • Roast: Spread the sweet potatoes in a single layer on a parchment-lined baking sheet.
  • Bake: Roast for about 45 minutes, flipping halfway through, until edges are golden and crispy and centers are tender.
  • Serve: Enjoy hot as a side dish or toss into salads, bowls, or wraps!
