Kale Apple Turkey Salad

A warm, tangy, and slightly sweet salad that brings together tender kale, crisp apples, sauerkraut, and shredded turkey for a nourishing lunch or light dinner.
Bonus: This salad pairs beautifully with a side of grapes and a few extra apple slices with cashew butter—a sweet and nourishing way to round out the plate.

Ingredients
  

  • 3–4 handfuls kale
  • 1 tbsp lemon juice plus more for finishing
  • 1 apple shredded or finely chopped
  • 2-4 slices turkey breast shredded
  • couple spoonfuls sauerkraut preferably with red cabbage and carrots
  • 2 tbsp water for steaming
  • Optional sides: grapes, extra apple slices, and cashew butter

Instructions
 

Steam the kale

  • Place kale in a pan on the stove with 2 tablespoons of water. Turn the heat to medium-high and use tongs to move the kale around as it steams and softens, about 2–3 minutes.

Add brightness

  • Once steamed, divide the kale between serving bowls and squeeze half a lemon over the top.

Prep the toppings

  • Use a mandolin to shred the apple (or finely chop it by hand). Pull the turkey breast into bite-sized pieces.

Assemble

  • Top the kale with shredded apple, sauerkraut, and shredded turkey.

Finish

  • Drizzle with the remaining lemon juice if desired, and serve immediately while the kale is still warm.
