Herby Spring Mix Salad
This refreshing salad is all about vibrant flavor and nourishing ingredients. A base of herby baby spring mix—loaded with greens like spinach, kale, arugula, and fresh herbs like parsley and dill—sets the stage. It's topped with juicy strawberries, crunchy pistachios, tender steamed asparagus, and a spoonful of tangy sauerkraut for a probiotic punch.
A creamy lemon-hemp dressing brings it all together with a balance of bright, nutty, and lightly sweet notes. This salad is perfect for lunch or as a colorful side to any meal—fresh, feel-good food at its best.
For the Salad
- 2–4 handfuls herby baby spring mix Look for a mix with greens like spinach, kale, chard, arugula, and herbs like cilantro, parsley, and dill (Smiths has one that we love)
- 2–3 tbsp sauerkraut choose one with clean ingredients like cabbage, carrots, and ginger if possible
- 1 handful pistachios chopped
- 3 asparagus spears chopped and steamed
- 1 handful strawberries chopped
For the Dressing
- 2 tbsp avocado oil
- 1 tbsp hemp hearts
- 1 tbsp water
- Juice of ½ lemon
- 1 tsp honey or to taste
Assemble the salad
Layer your herby greens on a plate or in a bowl. Add the sauerkraut, chopped strawberries, steamed asparagus, and pistachios.
Make the dressing
In a small jar, combine avocado oil, hemp hearts, water, lemon juice, and honey. Shake or blend until creamy.
