A Family Favorite: Vanilla Oatmeal Pancakes
These pancakes are a staple in our home—we make them at least twice a week! They’re incredibly easy to whip up, and we always have the ingredients on hand. Inspired by Medical Medium’s oatmeal pancake recipes, we created our own version to better suit our family’s preferences, adding vanilla, more cinnamon for extra warmth and flavor, and lessening the baking powder!
Our kids absolutely love these pancakes, and we hope yours will, too! The applesauce provides a natural sweetness, but if you prefer a little more, you can stir some maple syrup into the batter or drizzle it over the cooked pancakes. Vanilla Oatmeal Pancakes

Ingredients
- 4 cups oats
- 3 cups water
- 3 tsp baking powder
- 2 tsp vanilla
- 1 cup applesauce
- 2 tsp cinnamon
Instructions
- Preheat a griddle or pan to medium heat.
- Add all ingredients to a Vitamix blender. Blend until the batter is smooth.
- Pour 1/4 cup of batter onto the heated griddle (or adjust size to your preference).
- Cook until bubbles appear on the surface of the pancake, then flip and cook until golden brown.
- As you cook, the oats will absorb water, thickening the batter. Add 1-2 tablespoons of water at a time and stir to maintain a pourable consistency.
- Serve with our Blueberry Syrup or your favorite syrup. Optional: Add sliced bananas and chopped walnuts on top.
