We made these thick and fluffy protein pancakes this morning! Pancakes are a weekly tradition in our home, but I was ready for a change from our usual Applesauce Oatmeal recipe. So, I decided to try something new.

Occasionally, we’ll add protein powder to our recipes—not often, but when we do, it’s always a treat! Over the years, I’ve tried many plant-based protein powders, and my favorite is Truvani. Unlike most, Truvani shells their peas, making it a cleaner option. You can find it on their website, in healthy food stores, or even at Walmart.

Organic Pea Protein, Organic Vanilla Powder, Organic Pumpkin Seed, Organic Monk Fruit Extract, Organic Chia Seed Protein.

Protein-Packed Pancakes

These thick and fluffy protein-packed pancakes are perfect for fueling your day! Made with wholesome ingredients like eggs, bananas, almond flour, and vanilla protein powder, they’re easy to whip up in a blender and are delicious topped with berries or nut butter.

Ingredients
  

  • 4 eggs
  • 2 bananas
  • 2/3 cup tapioca flour
  • 1/3 cup almond flour
  • 1/3 cup rolled oats
  • 1 scoop vanilla protein powder

Instructions
 

  • Add all the ingredients to a blender. Start by pulsing, then switch to high speed to mix everything until smooth.
  • Heat a non-stick pan over medium-high heat.
  • Pour about 1/4 cup of the batter onto the pan for each pancake. Flip when tiny bubbles begin to form on the surface.
  • Serve warm and top with your favorite berries, nut butter, or both!

Notes

These pancakes are hearty, satisfying, and easy to customize with your favorite toppings. They’re perfect for breakfast or as a post-workout treat!
Tip: If they are too thick for you, add a little bit of water to them!
