Savory Roasted Sweet Potatoes

Ingredients
- 6–8 sweet potatoes, medium sized diced (skin on or peeled)
- 3 tbsp avocado oil
- 1 tsp italian seasoning
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
Instructions
- Preheat oven to 425°F (220°C).
- Prep the potatoes: Wash and dice sweet potatoes into bite-sized cubes (keep the skin on for extra fiber or peel if preferred).
- Season: In a large bowl, toss the sweet potatoes with avocado oil, Italian seasoning, garlic powder, onion powder, salt, and pepper until evenly coated.
