We had our annual Christmas Kickoff this last week and I made these! I wanted a healthier version of THE Highland High School Peanut Butter Candy Crispies (GO RAMS!) So I tried it with a bag of Organic Puffed Kamut Cereal by Arrowhead Mills that I grabbed from Good Earth Markets. You can use a bag of Puffed Rice or get some from amazon here. I usually get them from Good Earth when they go on sale. Happy Eating!

Kamut Choco Crispies

Cook Time 20 minutes
Course Dessert

Ingredients
  

Kamut Mixture

  • 1 cup Fresh Ground Peanut Butter
  • 1/3 cup Honey/ Maple syrup If vegan, use Maple Syrup
  • 1 tsp Vanilla extract
  • 1/2 tsp Cinnamon
  • 1/4 tsp Salt
  • 3 cups Kamut puffs or rice puffs

Chocolate Top

  • 1 cup Dark chocolate chips 1 cup
  • 1 TBSP Avocado oil or coconut oil melted 1 Tbsp

Instructions
 

  • Place 3 cups of the puffed Kamut in a medium sized bowl.
  • Put the peanut butter, honey, vanilla, cinnamon, and salt in a pot on the stove and stir on medium low heat.
  • When all the ingredients are melted together, add it into the Kamut bowl and stir.
  • Put the mixture into a 8×8 baking glass pan and spread it out evenly with a spatula.
  • Now put the dark chocolate chips and oil in the pot on the stove and stir til chocolate is dissoved and pourable but don’t over heat or it will clump together.
  • Pour chocolate over the Kamut mixture. Optional: sprinkle some more salt over the chocolate spread.
  • Place in freezer or fridge depending on how fast you need the chocolate to mold in place.
  • After 20-30minutes, take out treat and cut into squares and enjoy!
