This salad came together the way most of my favorites do—by pulling out the ingredients in the fridge that were on their last leg and seeing what could work. I had a herby spring mix from Smith’s that included dill (yes, dill in a salad mix!), and I couldn’t let it go to waste. Add in some leftover asparagus, a bit of sauerkraut, sweet strawberries, and a handful of pistachios… and suddenly, a new favorite was born.
Hope you enjoy this vibrant little creation as much as I did!

Herby Spring Mix Salad
This refreshing salad is all about vibrant flavor and nourishing ingredients. A base of herby baby spring mix—loaded with greens like spinach, kale, arugula, and fresh herbs like parsley and dill—sets the stage. It’s topped with juicy strawberries, crunchy pistachios, tender steamed asparagus, and a spoonful of tangy sauerkraut for a probiotic punch.
A creamy lemon-hemp dressing brings it all together with a balance of bright, nutty, and lightly sweet notes. This salad is perfect for lunch or as a colorful side to any meal—fresh, feel-good food at its best.
