Ingredients
- 3–4 handfuls kale
- 1 tbsp lemon juice plus more for finishing
- 1 apple shredded or finely chopped
- 2-4 slices turkey breast shredded
- couple spoonfuls sauerkraut preferably with red cabbage and carrots
- 2 tbsp water for steaming
- Optional sides: grapes, extra apple slices, and cashew butter
Instructions

- Place kale in a pan on the stove with 2 tablespoons of water. Turn the heat to medium-high and use tongs to move the kale around as it steams and softens, about 2–3 minutes.
