“Mom! It’s burning!” I remember shouting as I stirred the caramel on the stove. Mom rushed over, rescuing the golden mixture just in time. As usual, she handled most of the work, while I “helped” (which mostly meant sneaking bites of the freshly poured caramel popcorn).

Making caramel popcorn was a delicious tradition in my Woodland family during the Christmas season. I got to experience the joy of giving to neighbors and the fun of tasting our golden creation. It was always a special time with Mom and my five siblings, all crammed into the kitchen.

Now, as an adult, I realized I hadn’t kept up the tradition of gifting homemade treats to neighbors. But this year, inspired by my little Anthony, I decided to bring it back. Anthony was thrilled when goodies from neighbors started showing up at our door in early December, and he wanted us to join in the fun.

I wanted to create something special without using corn syrup, so I experimented with healthier alternatives. After lots of tweaks, we found our perfect sweet spot: a recipe made with coconut oil, maple syrup, sea salt, baking soda, and a touch of cinnamon.

This healthier version of caramel popcorn has quickly become a favorite in our home. You can enjoy it right after the mixture has been poured for a gooey, sticky treat or bake it in the oven to get that perfect crunchy texture. It’s a snack that lets us enjoy the magic of giving while making sweet memories together. I hope it brings a little magic to your kitchen, too!

Ooey Gooey Healthy Pop

This recipe transforms simple air-popped popcorn into a deliciously sweet and sticky treat using coconut oil, maple syrup, and a hint of cinnamon. Ingredients
  

  • 1/2 cup corn kernels popped in a hot air popper
  • 1/2 cup solid coconut oil
  • 1 cup maple syrup
  • 1/2 tsp baking soda
  • Salt and cinnamon to taste

Instructions
 

Pop the Kernels:

  • Use a hot air popper to pop the corn kernels into a large bowl. Set aside.

Prepare the Syrup:

  • In a small pot, combine coconut oil and maple syrup. Heat on high until bubbling, then let boil for 1 minute. Remove from heat.

Mix the Flavors:

  • Stir in baking soda, cinnamon, and a pinch of salt. Let cool for 2-3 minute, stirring frequently.

Combine:

  • Pour the syrup mixture over the popped popcorn. Toss well to coat. Adjust salt to taste, and enjoy immediately or let it cool down and set!

Preheat oven to 240°F (115°C).
Spread the coated popcorn onto a sheet pan lined with parchment paper or a silicone baking mat.
Bake for 35 minutes, stirring halfway through to ensure even crisping.
Let cool before serving.
