Dinner Inspiration: A Rainbow on Your Plate

Last night, I planned to eat leftovers for dinner—but after having them for lunch, I had to get creative. I scavenged for carbs and protein while keeping my golden rule in mind: always make your plate colorful. When in doubt, add some color! Seeking a rainbow in your meals often leads to a well-balanced dish.

Here’s how I filled my plate:

  • Yellow: Yukon gold potatoes turned into creamy mashed potatoes.
  • Red: Juicy, fresh grapes added sweetness.
  • Green: Bright asparagus, pan-cooked with lemon and salt, added a crisp touch.

If you’re missing a color, you’re probably missing a nutrient! Next time, I’ll add a good fat, like avocado—but alas, we were out.

Kid Tip:

Got picky eaters? If your kids turn their noses up at potatoes or sausages, ketchup can save the day! Letting kids squirt their desired amount gives them control over their plate and encourages them to dig in.

Polish Comfort Bowl with a Fresh Twist

This wholesome meal combines comforting mashed potatoes, vibrant pan-cooked asparagus, juicy grapes, and protein-packed Polish sausage. It’s a simple, balanced dinner that’s quick to prepare yet full of flavor.

Equipment

  • Instant Pot, Pan

Ingredients
  

Mashed Potatoes

  • 4–5 Yukon gold potatoes
  • 1–2 tsp salt to taste
  • ½ tsp black pepper
  • 2–3 green onions chopped
  • 1–2 TBSP avocado oil

Pan-Cooked Asparagus

  • 1 bunch asparagus
  • ½ lemon juiced
  • ¼ tsp salt

Protein

  • 1 pack Polish sausage 100% grass-fed and grass-finished, Teton Waters Ranch

Side

  • 1–2 cups fresh grapes or any other fruit, like Blueberries!

Instructions
 

Mashed Potatoes

  • Wash Yukon gold potatoes.
  • Place the metal rack in the Instant Pot and add water (enough to cover the top of the rack). Pressure cook for 10 minutes.
  • Drain water and mash potatoes with fork and add a drizzle of avocado oil, salt, and pepper.
  • Mix in chopped green onions for added flavor and texture.

Pan-Cooked Asparagus

  • Wash and trim the woody ends of the asparagus.
  • Heat a pan over medium heat and add a splash of water.
  • Sauté asparagus until tender, about 5–7 minutes.
  • Finish with a squeeze of fresh lemon juice and a pinch of salt.

Polish Sausage

  • Heat the sausage in a skillet over medium heat until browned and heated through, turning occasionally.

Final Touches

  • Plate the mashed potatoes, asparagus, and sausage.
  • Add fresh grapes on the side for a refreshing burst of sweetness.
