I credit this delicious paleo chicken sausage recipe to Dallin. One leftover day, he was ravaging through the fridge when he spotted some chopped onions and got inspired. He pulled out the kale, and I suggested adding Amylu’s Breakfast Time Mini Chicken Sausage Links that hadn’t been used yet (A Costco Find). These sausages are a favorite in our kitchen, made with chicken raised without antibiotics and simple ingredients like extract of rosemary, kosher salt, parsley, spices, and vinegar. With these wholesome ingredients coming together, voilà—a new family favorite was born!

Breakfast Kale and Sausage Skillet

This quick and nourishing skillet meal features tender kale, savory chicken sausage, and the sweet bite of sautéed onions. Packed with nutrients and paleo-friendly, it’s a perfect way to start your day.

Ingredients
  

  • 4 handfuls pre-chopped organic kale
  • 1/2 cup diced onion
  • 1/4 tsp garlic powder
  • Salt to taste
  • 4 Breakfast Sausage Links, cut into bite-sized pieces Amylu Antibiotic-Free Chicken

Instructions
 

  • Heat a skillet over medium heat and add the diced onions with a splash of water. Sauté until the onions begin to soften.
  • Add the chicken sausage pieces, garlic powder, and kale to the pan. You may need another spash of water to help with the kale.
  • Massage the kale gently as it cooks to help it wilt and release its flavor.
  • Stir everything together and continue sautéing for about 8 minutes, or until the kale is tender and the sausage is warmed through.
  • Season with salt to taste and serve warm.
  • Enjoy your hearty and wholesome breakfast!
