A few years ago, I attended a Favorite Things Party in Idaho and absolutely loved the concept. When we moved to Spanish Fork, I quickly met some amazing people who were becoming fast friends. Hosting this party before Christmas felt like the perfect way to celebrate these new connections and share some joy during the holiday season.
One of my “favorite things” is FOOD. So I made a charcuterie board with fruits, crackers, etc. Right before everyone got to the house, I realized that I had nothing green on the counter, so I whipped this Pomegranate Winter Salad up! My friend, Cassidy, helped me with the dressing before everyone else arrived. It’s vibrant, festive, and bursting with fresh flavors that everyone will love. With juicy pomegranate arils, crisp Asian pear, and a tangy citrus dressing, this salad is perfect for any holiday table—or whenever you want to feel a little extra fancy!
Pomegranate Winter Salad
Ingredients
Salad:
- ½-1 cup Pomegranate Arils
- 4 cups chopped Spinach
- 1 cup Arugula
- 1 Asian Pear
- ½-1 cup Blueberries
Citrus Dressing:
- 4 cutie oranges
- ½ tsp Poppy Seeds
- ½ TBSP Raw Honey
- 1 TBSP Avocado Oil
Instructions
Prep the Ingredients:
- Rinse and dry the spinach, arugula, blueberries, and pomegranate arils.
- Chop the spinach into bite-sized pieces.
- Thinly slice the Asian pear.
Assemble the Salad:
- In a large salad bowl, layer the spinach and arugula.
- Add the pomegranate arils, blueberries, and sliced Asian pear on top.
Make the Citrus Dressing:
- Juice the cutie oranges into a small mason jar.
- Whisk in the poppy seeds, raw honey, and avocado oil.
- Place the lid on the mason jar and shake until well combined.
Dress the Salad:
- Drizzle the citrus dressing over the salad just before serving. Toss gently to coat.
