It’s funny how some of my best ideas come from unexpected moments. One evening, I was rushing to an ugly Christmas sweater party and realized I was missing a key ingredient for a recipe that called for something red. After a quick glance around my kitchen, I spotted a pomegranate. Without a second thought, I grabbed it, and to my surprise, it was the perfect touch! The burst of sweet-tart flavor worked so well, I’ll definitely be making this Christmas Guacamole again for all the holiday gatherings to come!
Christmas Guacamole
Celebrate the season with this festive and flavorful guacamole that adds a merry twist to a classic favorite. Packed with creamy avocados, bright citrus, and a sprinkle of holiday-inspired pomegranate jewels, this recipe is a perfect addition to any holiday spread. Serve it with veggie sticks, Siete chips, or as a topping for tacos to make your celebration sparkle!
Ingredients
- 4 large avocados
- 3 radishes sliced
- 1 pomegranate deseeded the arils
- 3 green onions sliced
- 1/2 bunch cilantro minced
- 1 lemon juiced
- 2 dashes of salt adjust to taste
- 1 tablespoon avocado oil
Instructions
- Get out a medium-size bowl and fill it halfway with water. This bowl will be used for the pomegranate seeds and catching all the red juice!
- Slice the pomegranate in half and peel away the skin to remove the seeds into the bowl of water. Once done, rinse the seeds carefully to avoid squishing them. Set aside.
- Cut the avocados in half, peel the skin, and remove the pit. Place the avocado flesh in a medium-size bowl and mash until smooth but slightly chunky.
- Slice the green onions and radishes, and mince the cilantro. Squeeze the lemon juice into the avocado bowl.
- Add the green onions, radishes, cilantro, salt, and avocado oil to the mashed avocado. Gently fold in the pomegranate seeds, reserving some for garnish.
- Transfer to a serving bowl and garnish with the reserved pomegranate seeds for a festive touch. Adjust salt, oil, or lemon juice to taste if desired.
