I first created these cookies in 2018! I LOVE cookies but didn’t usually eat any because I couldn’t find them without all the added sugar and processed crap. So this was born out of wanting to participate in eating something sweet at. gatherings. I would bring these and offer them to everybody but usually would eat most of them because they were so good. Gluten free, dairy free, and soy free (check your chocolate chips), these make a delicious treat! and bonus, my kids LOVE THEM.

Dark Chocolate Almond Flour Cookies
These Dark Chocolate Almond Flour Cookies are a soft, chewy, and wholesome treat made with minimal ingredients and no refined sugars. Using just one bowl, these cookies come together quickly and are perfect for anyone looking for a healthier snack or dessert option. With almond flour as the base, they are gluten-free and naturally grain-free, while dark chocolate chips add the perfect touch of indulgence. Ingredients
- 1 Egg substitute with a vegan egg if needed (1 TBSP ground flaxseed and 3 TBSP water, sitting for 5 minutes before use)
- 1/4 cup Coconut Oil melted
- 1/4 cup Honey
- 1/2 tsp Vanilla Extract
- 2 cups Almond Flour
- 1/2 tsp Baking Soda
- 1/4 tsp Salt
- 1/2 cup Chocolate Chips soy-free, dairy-free, dark chocolate
Instructions
- Preheat the oven to 350°F.
- Line a sheet pan with parchment paper for easy cleanup.
- In a medium bowl, melt the coconut oil. Add the egg, honey, and vanilla extract, and stir to combine.
- Add the almond flour, baking soda, and salt directly on top of the wet ingredients. Stir until everything is well incorporated.
- Gently fold in the chocolate chips.
- Using a cookie scoop, scoop the dough onto the sheet pan. Flatten slightly for more even baking.
- Bake for 7 minutes. Note: Don’t bake for longer, even if they don’t look fully done—they will continue to cook once out of the oven!
- Let the cookies cool on the pan for a few minutes, then transfer to a wire rack to finish cooling.
Notes
The dark chocolate chips we use are soy-free, which makes them a great option for those avoiding soy.
If you prefer softer cookies, you can bake them for a minute less (about 6 minutes).
You can add chopped nuts (like almonds or walnuts) to the dough for an extra crunch!
These cookies are best enjoyed fresh, but they also store well in an airtight container for a few days, or can be frozen for longer storage.
