Creamy Cashew Hot Chocolate

Ingredients
- 1 cup cashews
- 1 tsp cinnamon
- 1/4 tsp sea salt
- 1/3 cup honey
- 4 tbsp cacao powder
- 4 cups filtered water
- optional: candy canes! Yum Earth makes ones without corn syrup, Red 40, or Red 40 Lake.
Instructions
Blend the base:
- Add all the ingredients—cashews, cinnamon, sea salt, honey, cacao powder, and water—into your Vitamix. Blend on high for 1-2 minutes until the mixture is smooth and creamy.
Heat it up, 2 options:
- In the Vitamix: Continue blending on high for 3-5 minutes until the mixture is warm.
- On the stove: Transfer the blended mixture to a pot and warm it over medium heat, stirring occasionally, until it reaches your desired temperature.
Taste and adjust:
- Pause and taste. Add a touch more honey if you want it sweeter, or a pinch more cacao for a richer flavor.
Serve:
- Pour into mugs and enjoy immediately.
Optional garnish:
- Crush a candy cane and sprinkle on top for a festive twist!
