We would listen to orchestrated music, movie soundtracks, music with angelic voices—which honestly is probably why I love listening to those things in the car when I am by myself.

But these days, I’ve found a simpler way to make it. I toss everything into the Instant Pot right when I wake up—before the house is up—and let it do its thing. No babysitting, no spills. Just warm, cozy oatmeal ready to go while I sip something warm, read, or get a little work done before the day begins.

This cozy Instant Pot steel cut oatmeal is hearty, nourishing, and incredibly simple to make. Lightly flavored with vanilla and apple pie spice, it brings that nostalgic slow-cooked feel—without the extra time or effort. Finished with fresh peaches and your favorite milk, it’s the perfect warm breakfast for slow mornings.

Ingredients
  

  • 2 cups steel cut oats
  • 5 cups water
  • 1 tsp vanilla
  • 1 tsp apple pie spice
  • Fresh peaches diced
  • Optional: unsweetened coconut flakes, milk of choice, and maple syrup to drizzle milk of choice

Instructions
 

  • Add steel cut oats, water, vanilla, and apple pie spice to the Instant Pot.
  • Secure the lid and set to Pressure Cook (High) for 4 minutes.
  • Allow a natural release for 10 minutes, then carefully release any remaining pressure.
  • Stir the oats well.
  • Top with diced peaches and a splash of milk if desired.
  • Add coconut flakes, maple syrup, or any favorite toppings and enjoy warm.
