Garlic-Cashew Pumpkin Seed Dressing

This creamy Garlic-Cashew Pumpkin Seed Dressing is a versatile and nutrient-packed addition to salads, bowls, or roasted vegetables. Made with blended cashews and pumpkin seeds, it has a rich, velvety texture and is brightened with fresh lemon juice. Ingredients
  

  • 1 cup cashews
  • 1/4 cup pumpkin seeds
  • 1 cup water
  • Juice from 1 lemon ~2 tbsp lemon juice
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt to taste

Instructions
 

  • Blend cashews, pumpkin seeds, water, lemon juice, garlic powder, onion powder, and salt in a high-speed blender until smooth and creamy.
  • Adjust water for desired consistency if needed. You may need to stir in a little more water as the days progress.

Notes

Store in an airtight glass jar in the refrigerator.
