Carmel Kettle Corn
This baked version of Ooey Gooey Healthy Pop delivers a delightful crunch with every bite. A healthier alternative to traditional caramel corn, it’s perfect for gifting or snacking.
Ingredients
- 1/2 cup corn kernels popped in a hot air popper
- 1/2 cup solid coconut oil
- 1 cup maple syrup
- 1/2 tsp baking soda
- Salt and cinnamon to taste
Instructions
Pop the Kernels:
- Use a hot air popper to pop the corn kernels into a large bowl. Set aside.
Prepare the Syrup:
- In a small pot, combine coconut oil and maple syrup. Heat on high until bubbling, then let boil for 1 minute. Remove from heat.
Mix the Flavors:
- Stir in baking soda, cinnamon, and a pinch of salt. Let cool for 2-3 minute, stirring frequently.
Coat the Popcorn:
- Pour the syrup mixture over the popped popcorn. Toss to coat evenly. Adjust salt to taste.
Bake for Crunch:
- Preheat oven to 240°F (115°C).
- Spread the coated popcorn onto a sheet pan lined with parchment paper or a silicone baking mat.
- Bake for 35 minutes, stirring halfway through.
Cool and Serve:
- Allow to cool completely on the sheet pan before enjoying. Store in an airtight container for up to a week.
